A new Cheese - Finally!



For those of you who know me, you have undoubtedly had various versions of the vegan queso dip I make, which is cashew-based and adapted from the Vitamix cookbook recipe, called "Not So Cheese". I'll post some other time about the greatness of that recipe and my variants of it that are fun to try. That one, is it ever a crowd pleaser! It's the kind of recipe that causes people to turn to me and say, '...wait Laura, I thought you were vegan." People can't believe it's not a dairy-based queso.



One time though, I did have an issue with that recipe. I brought it to a gathering and someone had a nut allergy, and almost tried it. No one in my life has a nut allergy, so I am less sensitive to this than I should be. It was a close call. After that, I've been on the lookout for the best queso I can find that does not contain nuts.

A member in one of my favorite vegan FB groups called What Vegan Children Eat posted a picture of her dip one day, and I was intrigued. I tried it and fell madly in love - so I am bringing it to you:

The Vegan Cheese dip recipe from the Simple Vegan Blog. I immediately made it and poured it over nachos. Then came the macaroni and cheese topped with french fried onions, which I served to my extremely picky friend Dena. She approved, which means you will too.

It i s so, so good. And a really fun thing is when you put it in a container in the fridge and let it cool, you can slice it like a block of soft cheese and put it on sandwiches, pizza, etc., and it melts. Not kidding.

Note: This is also made in the Vitamix. If you attempt to make in a lower powered blender it will not be as smooth or as sticky-melty in texture, as the high-powered blender breaks down the starch granules in the potato and gives it that creamy-pull-apart texture that queso has.
